White Bean Quinoa paddies packed with flavor for a sandwich on the go.

Ingredients:
» ½ Cup Quinoa
» 1 15oz Can Cannellini Beans (or any kind of white bean)
» 3 Medium Eggs
» 4 Tbsp Tapioca Flour/Starch (or Wheat flour)
» 1 Tbsp Hemp Seeds (optional)
» 1 tsp Garlic Powder
» ½ tsp Black Pepper
» ¼ tsp Himalayan Salt
» ½ tsp Paprika Powder
» 1 Medium Zucchini
» 1 Medium Onion
» 4 Medium Mushrooms (optional)
» 1 Loaf Sourdough Bread (or sprouted bread)
Directions:
Rinse quinoa and cook according to directions, or put into a pressure cooker on high with ¾ cup water and seal valve. Cook for 10 minutes and quick release when done.
While quinoa is cooking slice up veggies and set aside.
Rinse beans till bubbles are gone. Put into a food processor or blender, add eggs, tapioca, seasonings, and hemp seeds; blend till combined. Add in quinoa once done and blend till combined.
Heat up a large frying pan with 1 Tbsp avocado oil for about 1 minute. Take a ¼ cup and scoop out batter spread around on pan evenly for a circular shape.
Cover with a lid and cook for 2 minutes on one side and flip cook for another 2 minutes on the other side covered. Repeat with rest of batter, turn heat down to medium low heat to not burn the pan or patties.
While white bean quinoa patties are cooking, in a medium frying pan heat up 1 Tbsp avocado oil on medium heat for one minute. Add in onions cook for 2 minutes, add zucchini, and cook for another 2 minutes. Turn heat down to medium low and add in mushrooms and cook for another 2 minutes till cooked, once done turn off stove.
Put Pattie on sliced bread and top with veggies.
Cooking Tips:
Feel free to add more veggies, lettuce, tomatoes, spinach or whatever you have.
