White Bean Avocado Dip

Creamy savory white bean avocado dip with flavor of bean, garlic, cumin and paprika.

Servings: 6

Ingredients:

» 1 14oz Can great northern bean (or any other white bean)

» ½ Ripe avocado

» 2 Cloves garlic

» Half of a Lemon or 1 ½ Tbsp of lemon juice

» ½ tsp Himalayan salt

» 2-3 Tbsp cold water

» 1 Tbsp Extra virgin olive oil

» ¼ tsp Turmeric

» ¼ tsp Paprika

» ½ tsp Cumin

» 1 Tbsp Hemp seeds (optional)

Directions:

Rinse beans till bubbles are gone add to a pot and cover with water bowl for 20 minutes. While beans are cooking in a food processor or blender add garlic, lemon juice and salt blend together, let site for 10 minutes.

Once the garlic, lemon juice and salt are done add avocado and blend. Add cold water, drained beans, olive oil, spices and hemp seeds and blend together.

Cooking Tips:

If the dip is too thick at about 1-2 more tables spoons of cold water and blend. Great with chips, carrots, crackers and peppers.
