Packed with flavor, of cheese, tomato Italian seasoning and basil sauce, veggies, meat and pasta.

Ingredients:
» 1lb Ground turkey
» 12 Lasagna Pasta noodles
» 1 Tbsp Extra virgin olive oil
» 2 14oz cans diced tomatoes
» 2 Tbsp Tomato paste
» 1 Small Yellow onion
» 1 Medium Zucchini
» 1 Medium Yellow squash
» 4 Mushrooms
» 1 Medium Bell pepper any color
» 8 Fresh basil leaves
» 1 tsp Italian seasoning
» 2 Cloves garlic
» 2 Cups Spinach
» 5oz, 3 Cheese blend (Parmesan, Romano & Asiago cheese)
» 8oz Fresh Mozzarella cheese
Directions:
Get a large pot of water boiling for lasagna noodles. Once it has small bubbles cook according to directions and rinse under cold water when done.
Heat oven to 375°F
While oven is heating chop up onion and garlic, zucchini, bell pepper, mushrooms and yellow squash.
Heat up a medium pot over medium heat with 1 Tbsp of olive oil. Cook onion and garlic and for about 1 minute in heated oil, add in ground turkey and chop up with a spoon while turkey is cooking till almost done about 2 minutes.
Chop up basil and spinach, add in bell pepper, zucchini and yellow squash cook for 3 minutes.
Open diced tomatoes and paste and add it to the veggies and turkey combine. Add in Italian seasoning, basil and mushrooms cook till starts to boil for about 5 minutes and add in spinach. Once done take off stove and set aside.
Take a greased 9x13” baking pan and place 3 of the lasagna pasta on bottom and add some of the 3 cheese blend and fresh mozzarella and about 2 cups of the sauce mixture and spread around, add some more cheese and put 3 more pasta on top and keep layering it till you have 4 layers and the last one has sauce and cheese on top.
Put in oven for 24 minutes till cheese is melted and starts to brown on top.
Cooking Tips:
The lasagna has a little more juice after cooking compared to other lasagnas, if you want it to have less liquid put one can diced tomatoes and one can tomato sauce instead.
