Sweet Potato Sausage Stew

Warm and packed with flavor sweet potatoes sausage and veggie stew.

Servings: 6

Ingredients:

» 1 lb Good Quality Italian Sausage (or Ground turkey with ¼ tsp Himalayan salt & ½ tsp Italian Seasoning)

» 3 Medium Sweet Potatoes

» 1 Medium Zucchini

» 1 Medium Bell Pepper

» 1 Small Onion

» 2 Cloves garlic

» 1-2 Jalapenos

» 4 Large Tomatoes (or 2 15oz can crushed tomatoes)

» 2 oz’s Fresh Spinach

» 1 15.5oz can Great Northern Bean (or any kind of bean)

» 1 ½ Cups Low Sodium Vegetable Broth

» 1 Tbsp Extra virgin olive oil

Directions:

Peel, wash and chop up sweet potatoes, set aside.

Chop up onion and garlic, set aside.

Chop up zucchini, bell pepper and jalapeno.

In a large pot heat up olive oil on medium heat for about 1 minute.

Add in sausage and cook for 3 minutes till almost done. Add in onions and garlic cook for 2 minutes.

Add in sweet potatoes and cook for 2 minutes. Put zucchini, bell pepper and jalapeno in and combine. Cook for 2 minutes.

While that is cooking chop up tomatoes if using fresh tomatoes.

Add in tomatoes, vegetable broth, and rinsed can of beans, mix and bring to a boil. Turn down to low and simmer for 10-12 minutes till sweet potatoes are tender.

Chop up spinach and add into stew when potatoes are done and combine.

Cooking Tips:

I like the white sweet potatoes, but feel free to use the kind you like.

If you want to use ground beef instead of sausage or turkey, feel free to do that, make sure the beef is grass feed to get all the nutrients it has.
