Sweet Potato Noodle Stir-Fry

This is perfect for a quick lunch, packed with flavor. Great way to get veggies, protein and, healthy carbs and fat.

Cook Time: 12 Minutes

Total Time: 16 Minutes

Servings: 6

Ingredients:

» 16oz Sweet Potato Noodles

» ½lb Ground Turkey (mix in 2 tsp low sodium, ¼ tsp black pepper and 1 minced clove of garlic)

» 1 Medium Carrot

» 2 Green Onions

» 1 Small Zucchini

» 2 Hand Full of Fresh Spinach

» ½ tsp Black Pepper

» ½ Cumin Powder

» 1-2 Tbsp Oyster Sauce

» ¼ tsp Sesame Oil

» 1 Tbsp Extra Virgin Olive Oil

Directions:

Cook sweet potato noodles according to instructions.

Chop up veggies set aside.

Heat up olive oil in a medium pan on low medium heat for about 1 minute.

Add ground turkey to pan and cook till almost done about 4 minutes and add carrots, zucchini, and green onions.

Cook for about 3 minutes till veggies are tender and turkey is cooked. Add in black pepper, cumin, oyster sauce and sesame oil and combine.

Once noodles are done drain and rinse under cold water, so it stops cooking. Add to turkey and veggies mix-together. Add in chopped up spinach combine.

Cooking Tips:

Feel free to use any kind of veggies you like.
