Directions:
If the Dates still have pits take the pits out and put into a bowl. Pour hot water over dates till covered and let soak for about 2 minutes.
While the dates are soaking add the ½ cup of old fashion oats to a food processor and pulls for a few seconds.
Add ¼ cup almond flour, Dates, ¼ tsp cinnamon, 1 tsp chia seeds, and blend.
Once blended mix in the 2 Tbsp Goji berries and ¼ cup oats with a spoon.
Take a table spoon and roll into a ball, should make about 20. Take a bowl and put the 1/3 cup almond flour to roll each ball in.
Put in a glass container with a lid and place in fridge for 12 minutes before eating
Store in an air tight container in the fridge.
Cooking Tips:
Instead of using old fashion oats you can use instant oats. Make sure you blend up the dates before adding the oats and rest of ingredients if using instant oats.
Feel free to use a vanilla or plain protein powder instead of the Almond flour for the main part of the protein balls.
