Shredded Chicken & Veggies Tacos
Chicken and veggies tacos packed with protein and veggies.

Prep Time: 12 Minutes

Cook Time: 20 Minutes

Total Time: 32 Minutes

Servings: 4

Ingredients:

» 1 lb Boneless chicken thighs (or chicken breast)

» 1 Bell pepper any color

» 1 Small Zucchini

» ½ Yellow onion

» ¼ Cup Tomato sauce

» 1-2 Tbsp Taco seasoning

» 8 Fresh ready to cook tortillas

» Spinach or lettuce to go on top

Directions:

Pressure Cooker: Trim up chicken and place in pressure cooker put about 1 tsp of taco seasoning on top and ½ cup water. Select poultry setting and pressure cook on high for 10 minutes. While chicken is cooking chop up veggies and set aside. Once chicken is done take out onto a cutting board and shred with forks. Set pressure cooker to sauté setting and add onions cook for 2 minutes and add rest of veggies and cook for about 3 minutes. While veggies are cooking get the ready to cook tortillas cooking. Add chicken back in with veggies, tomato sauce and taco seasoning, mix together. Stove: Trim up chicken, heat up 1 Tbsp of olive oil in a pan on medium heat. Place chicken onto pan and put 1 tsp of taco seasoning on top. Cook for 5 minutes and flip and cook for another 5 minutes add ½ cup of water and cook for another 5 minutes. While chicken is cooking chop up veggies and set aside. Once chicken is done take out onto a cutting board and shred with forks. Add onions to pan and cook for 2 minutes and add rest of veggies and cook for about 3 minutes. While veggies are cooking get the ready to cook tortillas cooking. Add chicken back in with veggies, tomato sauce and taco seasoning, mix together.

Cooking Tips:

Feel free to add chopped up tomatoes, cheese and olives on top of tacos.
