Quinoa Berry Porridge

Sweet savory quinoa berry porridge. Packed with flavor, protein, healthy fats, healthy carbs, vitamins and minerals.

Total Time: 12 Minutes

Servings: 6

Ingredients:

» 1 Cup Dry Quinoa

» 1 Cup Fresh Blueberries (or Frozen)

» 6 Fresh Strawberries (about ½ Cup)

Toppings:

» 6 tsp 100% Maple Syrup

» 6 tsp 100% Natural Creamy Peanut Butter

» 1 ½ tsp Cinnamon

» 3 tsp Chia Seeds

» 1 ½ Cup Unsweetened Plant Based Milk

Directions:

Rinse Quinoa, and chop up the strawberries.

Pressure Cook:

Place quinoa into pressure cooker with 1 ½ Cups water, blueberries and chopped strawberries and pressure cook on high pressure with valve closed for 9 minutes. Once done quick release pressure.

Stove Top:

In a pot bring 2 cups of water to a light boil and put quinoa into the water and stir around. Cover with a lid and let cook for 10 minutes. When quinoa is at the 5-minute mark add in blueberries and chopped strawberries and stir. Cook covered for the remaining 5 minutes.

 

Once quinoa and berries are done put 1/3 cup in each bowl and add toppings to quinoa porridge with ¼ cup plant-based milk.

Cooking Tips:

Make sure to not over cook quinoa or it will be mushy.

If you do not like blueberries or strawberries feel free to add any berry you like. For more protein add sliced almonds or any other kind of nut.
