Ingredients:
» 1 Cup Pitted Medjool Dates
» ½ Cup Raw Unsalted Cashews
» ¾ Cup Buckwheat Groats Roasted or Raw (or Old fashion oats, quinoa crispies)
» 2 tsp Chia Seeds
» 2 tsp Flax Seeds
» 1 tsp Cinnamon Powder
» ½ tsp Ground Ginger
» ½ tsp Nutmeg
» ¼ tsp Ground Allspice
» ¼ tsp Ground Cloves
» ¼ Cup and 2 Tbsp Pure Pumpkin
» 2 Tbsp Dark Chocolate Chips 60% or higher
Directions:
Boil water to cover dates and cashews with.
Pit dates and place in a small bowl, add cashews and cover with hot water. Set aside for 5 minutes till dates are soft.
While dates and cashews are soaking, chop up chocolate chips into small chunks, set aside.
In a food processor add drained dates and cashews, blend till a paste.
Add in buckwheat grouts, chia seeds, flax seeds, spices and pumpkin, and blend together till all combined.
Take a cookie sheet covered with parchment paper, take 1 tsp of batter and roll into balls placing each one on the cookie sheet.
Put in fridge for about 15 minutes till they are set up and enjoy.
Cooking Tips:
Store in air tight container in fridge.
