Ingredients:
Dry Ingredients:
» 1 Cup Blanched almond flour (or Coconut Flour)
» ¼ Cup Flaxseed meal
» ½ Cup Old Fashion Oat blended (or oat flour)
» 1 Tbsp Chia Seeds
» ½ tsp Baking Soda
» ½ tsp Himalayan Salt
» 1 tsp Cinnamon Powder
» ½ tsp Ground Ginger
» ½ tsp Nutmeg
» ¼ tsp Ground Allspice
» ¼ tsp Ground Cloves
Wet Ingredients:
» 1 ½ Cup Pure Pumpkin
» 2 Eggs
» ¼ Cup 100% Maple syrup
» 1/3 Cup Dark Chocolate Chips (60% cocoa or higher)
Directions:
Heat oven to 350°F
In a food processor or blender add dry ingredients and blend together.
Add in wet ingredients and blend till all combined.
Add in chocolate chips and combine.
Take muffin tins and place in muffin pan or grease muffin tin. Use a ¼ cup and scoop batter and place in each muffin tin. Cook for 18 minutes, till a tooth pick comes out clean.
Let cool for a few minutes. Store in air tight container in fridge.
Cooking Tips:
Feel free to add more chocolate chips if you want.
