Power Protein Veggie Bowl
This bowl is packed with protein, veggies and flavor all mixed together creates a power bowl. Not just for your taste spuds but for your body.

Total Time: 20 Minutes

Servings: 4

Ingredients:

» One 14 oz can Kidney beans

» 1 head of romaine lettuce (or whatever lettuce you have)

» 2 Cups Spinach

» 2 medium white sweet potatoes

» 4 eggs

» ¼ tsp garlic powder

» ¼ tsp cumin

» ¼ tsp Himalayan salt

» Hemp seeds (optional)

» Hummus

Directions:

Heat up oven to 350°F, while oven is heating wash and chop the sweet potatoes up into cubes. Spray cookie sheet with extra virgin olive oil and put sweet potatoes on sheet spray potatoes with oil. Add seasonings on top and mix potatoes around. Use pressure cooker or pot of bowling water to make hard bowled eggs. In pressure cooker cook eggs on high for 8 minutes. In bowling water cook eggs for 10-12 minutes. Chop up lettuce and spinach combine into a bowl. Once the oven is heated cook potatoes for 5 minutes flip and cook for another 5 minutes or till potatoes are brown on the outside and soft on the inside. Rinse Kidney beans till bubbles are gone and set aside. When eggs are done run under cold water or put in ice bath and pill. Once pilled slice eggs up. Build your own power bowl with all ingredients and top with my hummus recipe or store-bought hummus and hemp seeds.

Cooking Tips:

Feel free to add any other veggies to the bowl (sweet bell pepper, green onion, zucchini, etc.). If you have an air fryer you can use that to cook the sweet potatoes if you do not want to use the oven.
