No Bake Peanut Butter Chocolate Cookies

Crunchy peanut butter chocolatey cookie. Tastes like a none healthy cookie, and is packed with nutritious ingredients.

Ingredients:

1 Cup 70% Dark Chocolate Chips (dairy free)

1 ½ Cup Old Fashion Oats

½ Cup Quinoa Crispies (optional) (or use old fashion oats)

2/3 Cup Adams Creamy Peanut Butter (or any peanut butter that is just

Peanuts)

4 Medjool Dates

2 Tbsp Chia Seeds

Directions:

Put parchment paper on a cookie sheet.

Boil some water to cover dates with.

In a small bowl place halved dates and pour water over till covered set aside.

In a medium microwave safe bowl add chocolate chips and place into microwave for 25 seconds and stir. Repeat 4 more times till chocolate is melted.

Once chocolate is melted add peanut butter and combine.

Take dates out of water and chop up as fine as you can. Add to peanut butter and chocolate and combine.

Add in chia seeds, oats and quinoa crispies and combine well.

Scoop out with a spoon and place onto cookie sheet press together and flatten into a circle.

Place into freezer for 6 minutes till firm.

Store in an air tight container in fridge.

Cooking Tips:

If you do not have peanut butter or are allergic, feel free to use any other nut butter.
