No-Bake Chocolate Peanut Butter Bars

Soft chocolatey peanut butter bars with a crunch. Great for on the go snack.

Ingredients:

Dry Ingredients:

» 1 Cup Quick Oats (or old Fashion Blended up)

» ¼ Cup Flax Seed Meal

» ¼ Cup Cocoa Powder

» 1 tsp Chia Seeds

» ½ tsp Cinnamon

» ¼ Cup Quinoa Crispies (optional)

 

Wet Ingredients:

» ¾ Cup Creamy or Crunchy 100% Natural Peanut Butter

» 1 Tbsp 100% Maple Syrup (optional)

» 6 Pitted Medjol Dates

 

» Dried Goji Berries to go on top (or dried strawberries)

Directions:

To start if the Dates still have pits take the pits out and put into a bowl. Pour hot water over dates till covered and let soak for about 4 minutes.

In a medium bowl add all dry ingredients and combine. Add in peanut butter and maple syrup and combine.

Once dates are done soaking put dates in food processor or blender without water and blend till fine.

Add dates to mature and combine.

Take a glass 8X6X2 inch pan and take some parchment paper and crumple up to fit into pan. Scoop all the mixture out of the bowl and put into pan, press down evenly and press goji berries on top.

Let sit for 15 minutes in fridge till it is set up.

Cooking Tips:

If you do not want it to sweet take out the maple syrup. You can use any kind of dried fruit you want just make sure it does not have added sugar. If you want it to have lower fat content use ½ cup peanut butter instead. Store in air tight container in fridge.
