Warm and packed with flavor lentils sweet potatoes and veggie stew.

Ingredients:
» 3 Cups Green Lentils (or brown)
» 2 Tbsp Avocado Oil (or Extra virgin olive oil)
» 1 Large Yellow Onion (or any kind of onion)
» 4 Celery Stalks
» 2 Medium Carrots
» 2 Medium Sweet Potatoes
» 2 Small Zucchini
» 3 Medium Mushrooms (optional)
» 6-7 Cloves Garlic
» ¼ tsp Himalayan Salt
» ½ tsp Black Pepper
» 2 tsp Ground Coriander
» 2 tsp Ground Cumin
» 2 tsp Turmeric Powder
» 1 tsp Ground Cinnamon
» 1 (28 ounce) and 1 (14.5 ounce) cans diced or crushed tomatoes
» 1 (14 ounce) can Coconut Milk
» 5 Cups Low Sodium Vegetable Broth (or water)
» 1 ½ Cup Chopped Parsley, stem removed
» 2 Tbsp Lime or Lemon Juice
Directions:
Place lentils in a bowl and cover with water let sit while chopping up veggies.
Peal, wash and chop up sweet potatoes, set aside.
Chop up Onion, garlic, celery, carrots, mushrooms, zucchini, and parsley, set aside.
Instant Pot:
In Instant Pot add oil set to sauté heat for one minute. Add sweet potatoes and cook for 3 minutes while stirring.
Add in onions, garlic and carrots cook for 2-3 minutes more.
Add in zucchini, celery, mushrooms, and spices combine and cook for 2 minutes.
Turn off sauté, add in diced tomatoes, coconut milk, drained lentils, and vegetable broth, combine.
Put lid on and turn valve to sealing and select high pressure for 10 minutes.
Quick release when done.
When done add in chopped parsley and lime juice combine and serve.
Stove Top:
In large pot add oil set to medium high heat for one minute. Add sweet potatoes and cook for 3 minutes while stirring.
Add in onions, garlic and carrots cook for 2-3 minutes more.
Add in zucchini, celery, mushrooms, and spices combine and cook for 2 minutes.
Turn heat to medium low, add in diced tomatoes, coconut milk, drained lentils, and vegetable broth, combine.
Bring to a light boil and put lid on and cook for 10 minutes, till potatoes are soft and lentils.
When done add in chopped parsley and lime juice combine and serve.
Cooking Tips:
I like the white sweet potatoes, but feel free to use the kind you like.
