Ingredients:
Filling Ingredients:
» 3 Fresh Peaches
» ¼ tsp Nutmeg
» ½ tsp Cinnamon
» 1/8 tsp Himalayan Salt
» 1 Tbsp 100% Maple Syrup
» 1 tsp Tapioca Starch/Flour
» 2 tsp Water
Topping Ingredients:
» ½ Cup Unblanched Almond Flour (or Coconut flour)
» ¼ Cup Tapioca Flour
» ¼ tsp Nutmeg
» ½ tsp Cinnamon
» 1/8 tsp Himalayan Salt
» 2 Tbsp 100% Maple Syrup
» ¼ Cup Water
Directions:
Heat oven to 350°F
Wash, peel and chop up peaches. Put peaches into a medium pot over medium heat, add nutmeg, cinnamon, salt and syrup mix all together. Once it starts a low boil after 2 minutes or so add in chia seeds, in a small container combine tapioca and water and add to peaches. Cook for 1 minute and turn off heat and set pot aside.
In a small bowl combine all topping dry ingredients and combine. Add in maple syrup and water and mix together.
In 2X6X8” baking pan pour peach filling and spread around. Pour the topping mixture over peach filling.
Cook for about 16 minutes till starts to bubble and turn brown. Let cool for a few minutes before serving.
Store in air tight container in fridge up to 6 days.
Cooking Tips:
You can always use nectarines, pears or apricots instead of peaches. If you do not have maple syrup you can use unfiltered raw honey, make sure to soften the honey.
