Savory eggs, with veggies packed with flavor. Perfect to go with a bowl of oats and berries, with some hash browns or as a snack.

Directions:
Heat oven to 350°F and grease a muffin tin with extra virgin olive oil.
Grate zucchini and chop up rest of the veggies and set aside.
In a medium bowl whisk together eggs and seasonings, add in zucchini and mix.
Mix in Kale, peppers, hemp seeds and green onions.
Take a ¼ cup and scoop egg mixture out and place into muffin tin.
Cook for 10 minutes till it is firm to the touch and a tooth pick comes out clean.
Let cool for a couple of minutes before serving.
Cooking Tips:
Make sure to grease the muffin tin good or they might stick a little.
Make sure to eat some healthy carbs with these, it has protein, veggies and healthy fat, but hardly any carbs.
