Cranberry Orange Muffins

Healthy cranberry orange full of flavor muffins. Great for a snack or even a quick breakfast. Packed with healthy carbs, protein and healthy fats.

Ingredients:

Dry Ingredients:

» 1 Cup Blanched almond flour (or Coconut flour)

» ¼ Cup Flaxseed meal

» ½ Cup Blended Old Fashion Oats (or Oat flour)

» 1 Tbsp Chia seeds

» ½ tsp Baking soda

» ½ tsp Himalayan salt

» 1/3 Cup Unsalted Raw Cashews

 

Wet Ingredients:

» 2 Eggs

» ¼ Cup 100% Maple syrup

» ½ Cup Unsweetened Apple Sauce

 

» 2 Tbsp Orange Zest (about 1 medium orange)

» ½ Cup Fresh Cranberries Cut in Half

Directions:

Heat oven to 350°F

Grease a muffin tin.

In a food processor add all dry ingredients and blend till fine and combined.

Add in wet ingredients and blend together.

Take out blade and add in halved cranberries and orange zest, combine with a spoon.

Use a ¼ cup and scoop batter and place in each muffin tin. Cook for 16 minutes, till starts to turn brown and a tooth pick comes out clean.

Let cool for a few minutes. Store in air tight container in fridge.

Cooking Tips:

Make sure to not over cook or the muffins will be dry.
