Chocolate Strawberry Cupcakes

Fluffy chocolaty strawberry cupcakes. Great for a on the go snack or dessert.

Ingredients:

Dry Ingredients:

» ½ Cup Blanched Almond Flour

» 1/3 Cup Tapioca Flour

» 1 Cup Old Fashion Oats Blended (or oat Flour)

» 1 Tbsp Chia Seeds

» ½ tsp Baking Soda

» ½ tsp Himalayan Salt

» ¼ Cup Cocoa Powder

 

Wet Ingredients:

» 2 Medium Eggs

» ½ Cup Unsweetened Apple Sauce

» ¼ Cup 100% Maple Syrup (or Unfiltered Honey)

 

» ½ Cup Chopped Fresh Strawberries

Directions:

Heat oven to 350°F and grease a cupcake tin.

In a large bowl mix all dry ingredients together.

In a small bowl combine all wet ingredients.

Pour the wet mixture into the dry and combine well.

Chop up strawberries and mix into cupcake batter.

Take a ¼ cup and scoop out cupcake mix into tin. Cook for 16 minutes till starts to turn brown and tooth pick comes out clean.

Cooking Tips:

If using honey make sure to soften it before adding rest of wet ingredients.
