Soft gooey dark chocolate, chocolate chip cookies. Perfect for a dessert or snack on the go.

Ingredients:
Dry Ingredients:
» 1 Cup + 2 Tbsp Chickpea Flour (Besan Flour)
» 1/3 Cup Unsweetened Cocoa Powder
» ¼ tsp Himalayan Salt
» ¾ tsp Baking Soda
» 2 tsp Chia Seeds
Wet Ingredients:
» ½ Cup Coconut Sugar (or 100% Maple Syrup)
» 5 Tbsp Water
» 1/3 Cup Avocado oil (or Cold Pressed Coconut oil melted)
» 1 tsp Vanilla Extract
» ¼ Cup 70% or higher dark chocolate
Directions:
Heat oven to 350°F
Put parchment paper or grease cookie sheet.
Put all dry ingredients into a large bowl and whisk together.
Whisk in water, avocado oil, vanilla, and coconut sugar combine well. Stir in chocolate chips.
Using a small scoop or table spoon. Scoop rounded mounds of dough onto cookie sheet, space about 2 inches apart. Bake for 8 minutes till tooth pick come out clean.
Cool for a couple of minutes.
Cooking Tips:
Store in an air tight container. If you do not have chickpea flour, spelt flour or almond flour should work.
