Chocolate Cake with Date Frosting
Fluffy chocolaty cake with a sweet date cashew frosting. Perfect to curve that chocolate sweet tooth.

Ingredients:

Cake:

» ½ Cup Unsweetened almond milk (or Oat Milk)

» 1 tsp Apple cider vinegar

» ¾ Cup Oat Flour

» ¼ Cup Blanched almond flour

» ¼ Cup Cocoa powder

» ½ tsp Baking soda

» ¼ tsp Himalayan salt

» 3 Tbsp Maple syrup

» 2 Tbsp Extra virgin olive oil

» 3 Tbsp Monkfruit sweetener (or coconut sugar)

» 1 tsp Vanilla extract

Frosting:

» 1/3 Cup Unsalted cashews

» 1/3 Cup Medjool dates pitted

» ¼ Cup Unsweetened almond milk (or Oat Milk)

Directions:

If using the oven to cook the cake, heat to 350°F. Cake: Combined the milk and apple cider into a bowl set aside. In a large bowl add all dry ingredients and mix together. In the bowl with the milk and vinegar add rest of wet ingredients and mix. Combined the wet ingredients with the dry mixture. Put the cake mixer into a 6-inch greased pan. Instant Pot: Cover the cake pan with two layers of tin foil. Put ½ cup of water into instant pot and the tray to place the cake pan on, put the lid on and turn the release valve to sealing. Set the instant pot to high pressure and cook for 30 minutes. Once done do the quick release and take out cake pan check with a toothpick to make sure it is done, should come out clean and let stand for 10 minutes. Oven: Once oven is heated place the cake pan into the oven and cook for 18-20 minutes till done and a toothpick comes out clean. Let cool for about 10 minutes. Frosting: While cake is cooking, boil some water to cover the dates and cashews with. Soak the dates and cashews for 5 minutes. Once done drain water and add dates and cashews to food processor or blender with ¼ cup of milk. Blend together and scrap edges and blend for a few more seconds. Once cake is cooled add date frosting to top of cake and spread around.

Cooking Tips:

If you want a little more chocolatey taste to the cake add 1/4 cup of dark chocolate chips. And to get some healthier fats in your diet add 2 tsp’s of chia seeds.
