Hint of Spice Chipotle Beef Veggie Tacos. Packed with flavor protein, healthy fats, carbs and veggies.

Ingredients:
» 1lb Already cooked Beef (Rotisserie Chicken, or canned chicken in water)
» 8 Ready to cook Mini Tortillas (or Corn Shells)
» 1 Large Bell Pepper any color
» 1 Small Onion
» 1 Bunch Romaine Lettuce
» 3oz’s Fresh Spinach
» 1 Avocado
» 2-3 Tbsp Tomato Sauce
» ½ tsp Garlic Powder
» ½ tsp Cumin Powder
» ¼ tsp Chipotle Chile Powder
» 2 tsp Extra Virgin Olive Oil
» ½ Cup 3 Cheese Blend or Parmesan (optional)
» Salsa (Optional)
Directions:
Heat up a large frying pan with 2 tsp olive oil on medium heat about 1 minute. And heat up a small pan for tortillas on medium low heat about 1 minute.
Chop up onions and bell pepper. Add onions to the large frying pan and cook for 2 minutes, add in bell pepper and cook for another 2 minutes.
Start cooking tortillas according to package.
Chop up beef and add to veggies with seasonings, tomato sauce and mix all together. Cook for 2-3 minutes till meat is warm.
Cut up Romain lettuce, spinach and avocado set aside.
Once shells, meat and veggies are done place out for everyone to assemble their tacos.
Cooking Tips:
If you do not want to use beef or chicken feel free to use turkey, beans or another kind of protein.
Use any other toppings for the tacos.
