Chicken Sweet Potato & Veggies Bowl
Savory chicken veggie bowl packed with protein, veggies and healthy carbs.

Servings: 6

Ingredients:

» 1lb Boneless chicken thighs (or chicken breast)

» 1 Broccoli crown

» 1 Medium carrot

» 1 Green onions

» 2 Cloves garlic

» 2 Medium sweet potatoes

Marinade for chicken:

» 1 tsp Soy sauce

» ¼ tsp black pepper

» 1 tsp Rice vinegar

Sauce:

» 2 Tbsp Oyster sauce

» ½ tsp Black pepper

» ½ tsp Soy sauce

» ½ tsp Rice Vinegar

Directions:

Dice up garlic set aside, chop up chicken into cubes and put in a bowl, add marinade ingredients and half of the garlic with chicken and mix. Set chicken aside and while that is marinading cut up sweet potatoes into cubes, chop up broccoli, carrot and green onion. Heat up a pan with 2 Tbsp of water, add chicken and cook for about 5 minutes till chicken is done. Once chicken is done put in a bowl and set aside. If most of the liquid is gone out of the pan add another 2 Tbsp of water and put in chopped sweet potatoes. Cook for about 5 minutes till potatoes are almost done. Add broccoli and cook for 3 minutes add in carrots and sauce ingredients. Cook for 5 minutes, after 5 minutes add in green onions and cook till veggies are done about 3 more minutes. Add chicken back in and mix all together

Cooking Tips:

If you want more protein and carbs cook some quinoa or brown rice to put it over. Add hemp seeds on top to get some healthy fat (omega-3) and protein.
