Cheesy Sweet Potato Casserole

Cheesy sweet potatoes packed with flavor. Great side dish for dinner. Pair with chicken, beef or some kind of meat and veggies.


Prep Time: 10 Minutes

Cook Time: 30 Minutes

Total Time: 40 Minutes

Servings: 10

Ingredients:

» 2lbs White Sweet Potatoes (or any kind of sweet potato)

» 3 Cloves Garlic

» 1 ½ Cup Unsweetened Plant based milk

» 1 ½ tsp Thyme

» 1 tsp Himalayan Salt

» ¾ tsp Black Pepper

» 2 ½ Cups good quality cheese (Gouda, Gruyere Cheese)

Directions:

Heat oven to 400°F

Dice up Garlic, add to a small pot along with milk, bring to a simmer on medium heat. Once light bubbles appear turn off heat and move to cool.

Peel and wash potatoes. Chop into thin circles (does not have to be that thin).

Grate cheese if not already shredded.

In a greased 9x13” shallow casserole dish, add half sweet potatoes out in a single over lapping layer.

Sprinkle with half of salt, pepper, thyme, and cheese.

Add rest of potatoes, salt, pepper, and thyme.

Pour garlic and milk evenly over potatoes and shake the dish gently to distribute the milk.

Sprinkle rest of cheese on top.

Cover with tin foil and cook for 20 minutes.

Take tin foil off and cook for additional 10 minutes till potatoes are tender and cheese starts to brown on top.

Cooking Tips:

If you want softer potatoes cook for another 5-10 minutes with tin foil on top.
