Banana Chia Pudding

Sweet banana cream cheese pudding. Great for a snack or a quick breakfast, just add some nuts and oats. Loaded with healthy fats, protein & fiber

Cook Time: 25 Minutes

Total Time: 30 Minutes

Servings: 8

Ingredients:

» 2 Ripe Bananas

» 4ozs Low Fat Cream Cheese (or vegan cream cheese)

» 1 Cup Non-Fat Plain Greek Yogurt (or dairy free yogurt)

» 2 Tbsp Chia seeds

» 4 Tbsp Water

» 1 Tbsp 100% Maple syrup

» 8 Tbsp Quinoa Crispies (optional)

Directions:

Let cream cheese soften up, and mash up the 2 bananas.

In a small bowl add chia seeds and water combine, let sit.

In a medium bowl add softened cream cheese, mix with a hand mixer or an actual mixer till creamy. Add in yogurt, maple syrup and mashed bananas, mix all together till combined.

Add in chia seeds once they start to gel up, combine.

Cover bowl and place in fridge for about 20-25 minutes.

Serve and top with quinoa crispies.

Store in air tight container in fridge up to one week.

Cooking Tips:

If you do not like bananas you could always blend up 1 ½ cups strawberries, or any other kind of berry instead.

The longer it sites in the fridge the stronger the banana taste will be.
