Amazing Spaghetti Sauce

Packed with flavor this is a dish you will want to make more then once. Has protein, healthy carbs, veggies and healthy fats

Servings: 5

Ingredients:

» 1lb Ground Turkey (or Grass feed Ground Beef)

» 12oz’s Red Lentil Pasta (or Whole wheat noodles, rice noodles)

» 14oz Can Diced tomatoes (or 3 Medium fresh tomatoes)

» ½ Medium Yellow onion

» 2 Garlic cloves

» 1 Cinnamon stick

» 1 Bay leaf

» 1 Small Zucchini

» 1 Small Bell pepper (or 3 Sweet Peppers)

» 2-3 Medium Mushrooms (optional)

» 1 Tbsp Extra virgin olive oil

» 1 Tbsp Tomato paste

» 10 Fresh Basil leaves (or ½ tsp dried basil)

» 1 Tbsp No sugar Ketchup (make sure it does not have high-fructose corn syrup)

» ½ tsp of Himalayan salt

» ½ tsp Italian seasoning

Directions:

Cook pasta according to package.

Chop up onion and garlic.

In a medium pot heat up 1 Tbsp olive oil on medium heat, add cinnamon stick and bay leaf to oil, mix with oil cook for about 1 minute till fragrant.

Put onion and garlic into pot, mix around and cook for about 2 minutes, add in ground turkey and chop up in pot with spoon. Cook till turkey is almost all the way cooked for about 3 minutes.

While turkey is cooking chop up rest of vegetables and fresh basil. Add veggies to pot at the 3-minute mark and mix, cook for another 3 minutes.

Add in Italian seasoning, diced tomatoes, ketchup, tomato paste, basil and salt mix all together. Turn heat to low and simmer for about 10 minutes. Take the bay leaf and cinnamon stick out. once pasta is done rinse under cold water, this helps it from over cooking.

Cooking Tips:

While the turkey is cooking make sure to mix it around to make it smaller. If you want spaghetti sauce to be thicker add another Tbsp of tomato paste. Top spaghetti with nutritional yeast instead of cheese for extra nutrients.
